The Squirrels are back!

 The joy of the day is that the squirrels have arrived back in our garden. We haven't seen them for a few weeks and I was really missing them. I'm sitting here now watching one of them grooming themselves under a cluster of mistletoe in our tree. ✨

Name Change

I have changed my name to Weediflower Creations from the more recent Queen of Wands Designs.  

The name Weediflower came into existence when my son's friend couldn't say our surname so called me Mrs Weediflower instead of Wiederhold.  The name has stuck with me for all these years so it seemed fitting to choose it as the name for my creative endeavours moving forward.

Snowflake Crochet Motif

I had such fun working on this Snowflake pattern this week and I hope you have lots of fun making them too.  I'm looking forward to making a whole blizzard of them each night while I watch television to decorate the house and tree with this winter - which might also help me to stop nibbling on mince pies quite so much.

Karen's Favourite Fruit Tea Cake (Fat Free)

Yesterday was a day for a lovely slice of an old favourite, accompanied by a hot mug of tea.  Lucky for me I remembered to soak the fruit the night before, which is an essential part of the process for making this cake on the day you want to bake it. 

Here's the recipe which i'm sure you'll enjoy too.

Karen's Favourite Fruit Tea Cake (Fat Free)



Ingredients

350g mixed dried fruit or raisins

175ml strong black tea

125g light brown sugar

225g self raising flour

1 lightly whisked egg


Method

Place dried fruit into a bowl with tea and sugar, stir until the sugar is dissolved.  Cover and leave for 12 hours.

Add the flour and egg to the fruit mixture and stir with a spoon to mix.  It's not necessary to beat the mixture.

Spoon into a lined loaf tin.

Bake at 160C (fan oven) for 90 minutes.

Allow to cool thoroughly before cutting.

Enjoy as is or with a light spreading of marmalade (or butter if you aren't on a fat free diet).
