350g mixed dried fruit, or mixed dried fruit with glace cherries or nuts added in.
170ml strong black tea. Sometimes I use flavoured tea such as Yorkshire Tea's Toast and Jam or Caramel Biscuit options.
125g light brown sugar
225g self raising flour
1 lightly whisked egg
Method
Place dried fruit into a bowl with tea and sugar, stir until the sugar is dissolved. Cover and leave for 12 hours.
Add the flour and egg to the fruit mixture and stir with a spoon to mix. It's not necessary to beat the mixture.
Spoon into a lined loaf tin.
Bake at 160C (fan oven) for 90 minutes.
Allow to cool thoroughly before cutting.
Enjoy as is or with a light spreading of marmalade (or butter if you aren't on a fat free diet).
